Toyama dried persimmons are made using “Sansha persimmons,” a type of bitter persimmon
That has been cultivated in certain areas of Nanto City, Toyama Prefecture (formerly Fukumi Town and Johana Town) for about 400 years.
These persimmons are large, weighing around 300g each, and are known as the most bitter variety in Japan.
However, this bitterness makes them exceptionally sweet when dried.

After harvest, the Sanja persimmons are peeled, hung on drying racks, and undergo multiple cycles of drying and resting to slowly evaporate moisture.
Each persimmon is then carefully massaged by hand to evenly distribute moisture and sugar throughout the flesh.
Finally, they undergo a finishing drying process to reduce moisture content to approximately 30% or less, leaving just the right amount of moisture before being shipped.
This meticulous process, combined with the unique characteristics of the Sanja persimmons, creates the distinctive flavor and texture of Toyama dried persimmons.
